High voltage spinning or electrospinning is a relatively new technology which utilizes high electric fields to produce fibers, capsules and other structures made of natural and synthetic polymers with diameters ranging from various nanometers to few microns. The ultrathin size of the electrospun structures allows exploring the creation of novel functional materials with unique properties of significant interest in application fields such as foods, pharmacy and biomedicine. The current PhD work aimed to develop novel electrospun materials of potential value in all of the above applications and with particular interest in the generation and/or encapsulation of new biocides, food fortifying additives and new nanostructured bioactive biopolymers with control release capacity of natural extracts or antibiotics.
